Sweet Red Pepper Turkey Lo Mein

Sweet Red Pepper Turkey Lo Mein
Turkey struts in a low fat lo mein Chinese meal.
Did you remember the fortune cookies?

Ingredients:
8 oz. uncooked lo mein noodles
1/2 cup chicken broth
1/2 cup purchased stir-fry sauce
1 tablespoon cornstarch
1 teaspoon grated lemon peel
1 tablespoon oil
3/4 lb. fresh turkey tenderloin, cut lengthwise
into 2-inch-wide strips, thinly sliced
1/8 teaspoon salt
2 cups Green Giant® Frozen Broccoli Cuts
2 medium red bell peppers, cut into 1-inch pieces
1 medium onion, sliced

Directions:
Cook noodles to desired doneness as directed on
package. Drain. Meanwhile, in small bowl, combine
broth, stir-fry sauce, cornstarch and lemon peel;
blend well. Set aside.

Heat oil in large skillet or wok over medium-high
heat until hot. Add turkey strips; sprinkle with
salt. Cook and stir 3 to 5 mins or until turkey
is no longer pink. Remove turkey from skillet;
cover to keep warm. Add broccoli, bell peppers
and onion to same skillet; cook and stir 4 to
5 mins or until vegetables are crisp-tender.
Return turkey to skillet. Stir cornstarch mixture
until smooth. Add to skillet; cook and stir
until sauce is bubbly and thickened. Serve over
noodles.
