Fortune Cookies

1/4 cup flour
2 tablespoons sugar
1 tablespoon cornstarch
2 tablespoons oil
1 egg white
t tablespoon water
dash of salt

Prepare 8 fourtunes ahead of time. Sift together flour,
sugar, cornstarch and salt. Add oil and egg white;
stir until smooth. Add water and mix well. Make one
cookie at a time: Pour 1 tablespoon batter onto lightly
greased skillet, spreading batter to a 3 1/2 inch circle.
Cook over low heat until lightly browned. With wide
spatula, lift and turn; cook one more minute.
Working quickly, place cookie on a clean pot holder.
Place fortune in center; flold cookie in half and fold
again over edge of bowl. Cool.
