Pepper Steak
Pepper Steak
1 lb. flank steak, diagonally sliced
Marinade
1/4 c. soy sauce
2 T. Dry Sherry
1 tsp. sugar
2 tsp. cornstarch, corn flour
1/4 c. water
2 T. oil
4 cloves garlic, chopped
2 tsp. ginger root, peeled, and grated
2 scallions, chopped
2 T. oil
1 lg. onion
2 green peppers, sliced
Marinate steak for 15 mins., or more. Add oil to
hot wok.Swirl and stir fry garlic, ginger, and
scallions for 30 secs. With slotted spoon, reserving
the marinade, add half the steak, and stir fry for
3 mins. Remove, and set aside. Repeat with remaining
steak. Add oil and stir fry onion and green
peppers for 2 mins. Push vegetables to sides of
wok. Add marinade to center of wok, and stir
until thickened, and bubbly. Blend in vegetables,
add steak, and heat thoroughly.
